Delicious food in an informal atmosphere, at our restaurant in Bergen you will feel as if you are eating in a living room-cum-kitchen with close friends.
Vigor stands for passion and energy. The pride of our restaurant in Bergen is the wood oven. That oven does not only add to the atmosphere. The main reason for its presence is that the chef can roast or bake all kinds of dishes in it. Such as fish - the salt-crusted bass is a great success. Or vegetables, like truffle potatoes, aubergines and tomatoes from our own garden.
At breakfast time, the oven is used to bake bread and fry eggs. And of course pizzas – with a crispy thin crust – go into the oven. Children who want to celebrate something, can make their own pizzas.
The chef of our restaurant in Bergen would describe his kitchen as Provencal Mediterranean with blooming flair. The dishes are pure. The ingredients, most of which come from our own kitchen garden and from farmers in the region, are pure. And for anyone who would like some extra fresh rosemary or basil to season a dish, there is a pot of fresh herbs on the table. Is your favourite herb missing? Just ask for it at the next table!
In addition to the oven, the wall showing a picture of a life-size photo, made by Cas Oorthuys, is an eye-catcher in the restaurant. In the picture you see women working in the kitchen at blooming half a century ago. More photos from this series by Cas may be found here and there in the hotel.
A private meal is also possible at our restaurant on the Dutch coast in Bergen. In the sampling room for instance. This room seats 16 persons and is also suited for a wine sampling. In the other dining room, which has its own fireplace, you can be seated at an impressive table to enjoy a meal with 22 persons. So draw up a chair! Wine, water, oil and herbs on the table and pass on that dish of goodies.
